  1. Take Milk
  2. Take Milk Powder
  3. Make ready Cardamom Pods
  4. Prepare Lemon
  5. Make ready Almond (Chopped)

Instructions to make Almond Elaichi Sandesh:
  1. Put milk in a bowl. Let it boil.
  2. Squeeze the juice of lemon and put it in a bowl. As milk starts boiling, add the juice.
  3. Milk starts curdling as soon lime juice is added. Add more juice only if needed.
  4. When greenish whey appears, extract the chana. Drain out the excess water from the chana.
  5. Put a bowl in oven. Add the chena in bowl. Add 4-6 spoon milk powder. Start mixing.
  6. Mix everything, make sure that lumps are not forming. Also don't let chana stick to the bottom.
  7. Add the crystal sugar. (Crystal sugar dissolves quickly, also doesn't make the mixture runny). Stir continuously.
  8. Crush the cardamom pods with a mortar-pestle. Put it in the same bowl. Add half of chopped almond.
  9. Keep the flame low and make sure to stir continuously.
  10. Take a plate. Brush ghee on the plate. Transfer the chana on the plate.
  11. Add around 6 spoon milk powder.(Add more only if needed). Start kneading. Make sure chana doesn't get dried.
  12. Grease palms with dollops of ghee. Make balls from the chana. Flatten them with palms. Put chopped almond,one in each. Keep in refrigerator for 10-15 minutes.(Make sure to cover it otherwise Sandesh will become dry).
