  1. Make ready 3 cups rice
  2. Get 1 large onion, chopped
  3. Prepare 400 g diced meat, cooked
  4. Take 1 cup raisins
  5. Get 1 cup apricot, cut into small pieces
  6. Take 220 g melted butter
  7. Take 3 tbsp Saffron water
  8. Take 1 large Lavash bread or 5-6 medium tortilla bread
  9. Make ready to taste Salt and pepper

To make rice pilaf, you want to start with a base of onions and then cook the rice in a broth rather than water.   2. Heat the oil in a frying pan. Add chopped onion and fry onion until soft.
  3. Then add cooked meat, dried fruits, season with salt and pepper and fry for few minutes.
  4. َ َAdd some saffron water. Stir constantly to prevent from burning and set aside.
  5. Fill a pot with water. Bring it to a boil.
  6. Drain salted water of rice and add it to the boiling water. Let to cook for 10 minutes.
  7. Using a colander and strain the rice, then Rinse with tap water.
  8. Melt the butter and spread it on the bottom and sides of the pot.
  9. Place one round bread on the bottom of the pan.
  10. Grease each Lavash or tortilla bread with melted butter and arrange around the sides of the pan, overlaps each other (as you see in the photos).
  11. Do not leave any open space between breads.
  12. Now, Spread a layer of rice in the pot and then pour some of meat and fruits mixture.
  13. Pour some saffron water on the rice. Repeat the procedure again.
  14. Cover top of the rice with another round bread.
  15. Then fold the corners down.
  16. Grease with melted bread.
  17. Cover the pot with a lid. Cook in the oven for 50-60 minutes until Lavash bread is golden.
  18. Remove from the oven and let to rest 5 minutes. - Turn the pot upside down and cut the crust into portions and serve it.
