  1. Chop chorizo into rounds and fry on olive oil.
  2. Add onion and garlic and fry until translucent.
  3. Add tomato purée and fry for a few minutes.
  4. Add butter beans and fry until the skins begin to colour/burst.
  5. Add tin of tomatoes, lemon juice, salt and pepper and sugar. Cook on high heat until most of the liquid has gone. Check for seasoning. Add fresh chopped parsley.
