- Add the crushed Tomatoes to a small frying pan, next add the cruhed Garlic and all items (except the Egg also sour cream) Mix and heat up
- Next when its bubbling for 2 minutes turn down the heat to Simmer for 5 minutes
- Add the Smoked or Chilli cheese Grated over the top to melt.
- Then add the egg as if you were frying it break and pour in the middle sunny side up. Cover and leave for 2 or 3 minutes so as the egg is cooked and have a soft yolk. Add a blob of Sour cream (optional)
- Serve with soft tortillas or crispy ones.
