  6. Get 1/2 tsp nutmeg, grated
  7. Make ready 1/2 tsp licorice root, grated (athimathuram in Tamil)
  8. Make ready 1 tsp freshly ground pepper
Steps to make Carrot Lassi:
  1. Collect all required ingredients; keep them within your reach.
  2. Blanch 2 carrots. Drop big pieces of carrot (big enough for grating) in boiling water: after a couple of minutes (4-5 minutes), remove. (Do not discard the water; use it as vegetable stock, and immerse them in ice cold water), Immerse the carrots in ice cold water; strain. This is blanching. This is blanching. Dry the carrots with a paper towel or a clean kitchen towel.
  3. Grate the blanched carrots. Use 2c for making lassie. Blend carrots with ginger, green chile, cardamom, curd, vegetable stock. If it is too thick for you, dilute adding water or ice cubes.
  4. Using a small grater, grate nutmeg and licorice root. Add the freshly grated nutmeg and licorice to the lassi. - Using a peppermill, sprinkle freshly ground black pepper. Lassi is ready. You may chill it in the refrigerator to drink later
