- Take 2 green chilli, chopped

- Get 2 pinch, turmeric powder
- Take Salt as required
- Get 1 tsp sugar (optional)
Instructions to make Eggplant With Curd:
- Wash and chop eggplants as you like. Mix fried besan, turmeric, sugar with the curd.
- After some seconds add curry leaves. Fry till aroma come out. Add both the dals, fry till golden brown on low flame.
- Then fry the chopped eggplants, add salt, cook covered for 2 minutes. Next add grated coconut and fry on low flame, covered, till, the eggplants are cooked.
- Add the curd mixture, mix well with cooked eggplants.. Allow to boil. Keep the gravy as you like. Serve hot with boiled rice /roti. - Thanks
