  1. 🍆 - Smoky eggplant 🍆raita - Wash brinjal and apply little oil on it.
  2. Roast the eggplant over a flame until cooked.
  3. Peel the skin and mash it with fork and let it cool.
  4. In a bowl take yogurt and beat well.
  5. Add fresh dhania, chopped green chilli, tomato and salt.
  6. Mix well and add cooled eggplant mash. - Mix with light hand.
  7. Tarka - Take 6 Button chilli, - 1/2 tsp mustard seeds - Curry leaves - 1/2 tsp grated ginger - 3 tbsp oil
  8. Heat oil and add mustard seeds.
  9. Add Button chilli and grated ginger, saute until golden.
  10. Add curry leaves. - Pour tarka on raita. - Serve chilled.
