- Roast the eggplant on an open flame for 10 minutes. Once roasted, let it cool for a couple of minutes and then peel the skin off. Remove the seeds and mash.
- Heat oil in a pan. Add ginger, garlic, green chilli. Add onions and stir fry. When golden brown add the tomatoes. Stir and add salt, jeera powder, dhanya powder, haldi and red chilli powder. Add the eggplant. Mix well. Add the dahi and stir. Cover and let it cook for 2 mins. Garnish with coriander and serve.
